The Spicewood Kitchen

A commercial sized kitchen was installed on the barn floor of the Ulla Barn after pressure from Donna and Mary Ann, presently the main cooks in the author's life.  The name was taken from a common bush found in the woods in Monroe County; the decor was taken from Mexican influence.  The concept is to have a place for chefs, guest or otherwise, to cook up a culinary delight with little constraint for space or number of guests entertained.

After having acquired an expensive palate from year's of expense account living, the author shares his recipes and culinary ideas.

 

 

 On a business stay to Egypt, I stayed in a Moevenpick Hotel, a Swiss hotel chain.  Two of their offerings, stated to be of Egyptian style, were apparently simple, but elegant.

 

Chicken Sharkassia

The chicken breast is stewed, then chunked.  The sauce is a white sauce, the flavoring of which relies mostly on pecan nuts.  The rice with which it was served was flavored with cinnamon.  Delicious with a light, but not too dry, white wine, such as a California gewurtztraminer, or a medium German riesling.

 

Reconstituted figs for breakfast???   Cover dried figs with hot water, let set for 2 to 4 hours, serve as is.  Found to be delicious at the breakfast buffet.
